Cooking with Fruit Pt. 2: Peach Cobbler Oatmeal

Well folks, due to astonishingly warm winter, Georgia peach season wrapped up unseasonably early, but have no fear there is still crop to be had from elsewhere! My Kroger had them 99 cents a pound this week! So check your sale ads and pick some up for this recipe because you’re gonna want to try this yummy breakfast!

I will be the first to say I really don’t like oatmeal plain.. it’s mushy and gross. The peaches in this breakfast add this pop of brightness and sweetness that I just love! Add a little brown sugar and it seriously tastes like dessert.

I use old fashioned oats and cook them with a ratio of 2 parts water to 1 part oats in the microwave for about 1 minute, stir, then another 30 seconds or so until its absorbed all the water. Then you get to dress it up! I add a splash of milk, a peach peeled, pitted, and diced, and a sprinkle of brown sugar on top. Voila! A delicious healthy breakfast with only 325 calories, 8.5 grams of protein, and 7.5 grams of fiber!

P.S. looking to add an extra crunch like a peach crisp or peach pie? Try sprinkling some crunchy granola on top as well! Need more spice? Add a dash of cinnamon!
